  • 1 Bell Pepper, medium
  • 1 can Black Beans, canned - (omit if on paleo)
  • 4 ears fresh Corn or 1 can - (omit if on paleo)
  • ½ Red Onion, medium
  • 1 medium head Romaine Lettuce
  • 1 Zucchini or Cucumber medium
  • ½ medium Jicama (peeled and diced in ¼-inch pieces**)
  • 4 medium Tomatoes (seeded and diced into ¼-inch dice**)

Dressing

  1. 2 Tbsp Honey
  2. ¼ cup Lime juice, fresh
  3. 1 clove Garlic
  4. ½ cup Cilantro
  5. 1 Black Pepper, freshly ground
  6. ½ tsp Sea Salt
  7. ½ tsp Cumin/li>
  8. 3 ½ Tbsp Coconut or Avocado Oil
  9. 2 Tbsp Olive oil, extra virgin
